This Meatloaf Recipe makes two 9×5 loafs
Meatloaf is one of my kids favorite dinners. Like right up there with pizza, but it’s probably one of the most time consuming meals I make. You can make it easier if you have a stand mixer but you can definitely make it without one. I’ve tried skipping the step where you sauté the veggies to save time and it went from my kids favorite dinner to something they didn’t want to finish. So I highly recommend not skipping that step even if you don’t have picky eaters. It makes a huge difference!
Makes 2 9×5 loaves
2lbs grassfed ground beef
1 1/2 cups rolled oats
1 cup filtered water
2 1/2 sea salt
1 tsp onion powder
1 tsp garlic powder
1 onion diced
1 carrot shredded or finely diced
1 stalk celery finely diced
3 cloves garlic minced
1 tbs Mexican oregano
4 tbs butter
Preheat oven to 350
In a large bowl or stand mixer combine ground beef, oats, spices, salt, egg, and minced garlic
Saute diced onions, carrots, and celery in butter on low until tender for about 20 minutes.
Add sautéed veggies to the mixer bowl and mix about 2 minutes.
Divide evenly among 2 loaf pans and bake for 1 hour at 350.
Allow to cool at least 10 minutes before slicing.
